When Penny started as one of our Innkeepers, she brought this recipe with her
and these cookies have been a favorite at the Inn ever since. We included the recipe in
one of our newsletters and, by request, we feature it as our April recipe. One guest has
told me that at her home they are known as "Olallieberry Cookies" and everyone
knows how to make them. Regardless of the name, we know you'll call them yummmmmy!!!
PENNY'S POTATO BUD COOKIES
INGREDIENTS
1 cup butter
2 cups sugar
1-2 tsp. coconut extract (to taste)
2 eggs
2 2/3 cup Betty Crocker potato buds
2 2/3 cup Bisquick
METHOD
Cream
together softened butter and sugar. Add coconut extract and eggs and blend well. Add
potato buds and Bisquick. Blend until all the buds are incorporated into mixture. Mixture
will be slightly dry and crumbly. Drop by teaspoonful onto lightly greased cookie sheet.
Bake at 350 degrees for 13-15 minutes.
