One of our friends, Pam, would always bring cookies and cake to the Inn for
the staff. One day she brought a wine cake that everyone fought over. When we asked for
the recipe, she told us that her husband, Dan, had made the cake and we would have to ask
him. We did and this cake has been a favorite at the Inn ever since.
DAN'S WINE CAKE
INGREDIENTS:
1 package yellow cake mix
1 package instant vanilla pudding
¾ tsp. nutmeg
4 eggs, beaten
¾ cup oil
1 cup pale dry sherry
METHOD
Mix all
ingredients together and beat for 5 minutes. Pour into an oiled Bundt pan and bake 50
minutes in a pre-heated 325 degree oven. Remove, cool, and dust with powdered sugar.
(Recently we have been putting 1 cup chocolate chips in the batter. Yum!!!)
