A recent guest asked for this recipe after being served Poached Apple Crepes.  So this month it will be our recipe of the month and next month I’ll give you the recipe for the crepes.

 

ALMOND CREAM SAUCE

INGREDIENTS 

6 egg yolks
3 tbsp cornstarch
1 cup sugar
2 ½ cups half and half
1 tbsp valilla extract
1 tsp almond extract

METHOD

Add all ingredients except vanilla and almond extracts in a sauce pan and whisk together until dissolved.  Cook over low heat stirring frequently until sauce comes to a boil and thickens.  Remove from heat and stir in extracts.  Place a piece of plastic wrap directly on top of sauce to keep film from forming.
