Most of the recipes we've put up on the home page we serve at the Inn and are
in our cookbook. For March we thought we'd share with you a recipe we've been enjoying and
is actually a variation of the "chicken and citrus" recipes in the cookbook.
This is easy to prepare, and, wraps are the "in" thing now.
CHICKEN CAESAR WRAP
INGREDIENTS
4 boneless and skinless chicken breasts
½ cup orange juice
¼ cup lime or grapefruit juice
4 cloves garlic, peeled and sliced
1 tsp. oregano leaves
½ cup vermouth (optional)
1 head Romaine lettuce
½ cup Italian dressing
½ cup Parmesan cheese
4 wraps
METHOD
Wraps are like thin tortillas and can be found in the deli section of most
markets. They usually come is several different flavors. Place first six ingredients in a
pan and marinate for several hours. When you are ready to cook the chicken, remove form
marinade and save garlic. Make small slits in the chicken and insert all the garlic. Broil
or barbecue chicken until done. Slice chicken cross-wise in strips. Chop lettuce and toss
with dressing and cheese. Heat wraps in microwave or on a grill; place a sliced chicken
breast and salad on wrap; fold wrap and serve. Extra salad can be served on the side.
Excellent with a cup of soup. Enjoy!!
